Today was hard because of the amount of information to go over...but we did it and I have a family friend who is from the Philippines 🇵🇭 and was so kind to bless us today not only with a Facebook message from her family to ours with photos from the boys home. which makes me really want to plan a trip there!!! Bonus she shared a wonderful but meal that everyone in my family loved! This was a HUGE win, #1. It was super easy to make, #2. My kids are super picky eaters and don’t usually like veggies so the fact that they are this and loved it was such a cool feeling! My son even said mom I want to eat this for my birthday. The recipe is in my photos but since I am new to cooking I kinda went a little American with the reciepe.... What I did to make easy... I bought vermicelli rice noodles HEB (our local grocery store in Texas ) sells them and a premade Asian salad mix, I used one can of green beans Red bell pepper chopped up, yellow bell Pepper chopped up. 1/2 of onion chopped A few scoops of chopped garlic-I don’t like chopping lol 😂 I Cooked the noodles just follow directions on package. In a pan I added the green beans first since they were canned I wanted them to chop up in the pan easier. Then added onion and garlic. Mix together, add in bell peppers mix together then lastly add whole salad mix. I added more olive oil on top of the salad mix so it would be easier to cook in the pan and move it around easier, cook 👩🍳 till the salad mixture is darker green in color. We had left over pork roast sliced thin from Sunday nights dinner so I used that pork chopped up and used the salad mixture dressing over the top to flavor the pork. You can use soy sauce too but I knew the sauce that came with the Asian salad mix would be yummy 😋 so that’s what we used. I kept a all the ingredients separate because I have a friend that is vegan 🌱 so I wanted to share with her. We have left overs so second win because we have lunch for tomorrow too 🥰
