Escarole Soup 6 chicken breasts Celery with leaves Carrot Onion Parsley Salt pepper Boil all this in water for 1 or 2 hours Take chicken out to cool. Meatball recipe 1 1/2 lbs ground beef 1 egg Parsley Breadcrumbs Salt and pepper Make small meatballs and drop into soup. Add pieces of chicken back into the soup 3 heads of escarole Chop and cook in salted boiling water 15 min. Boil beef bullion in cup of water and add to soup. Godere!
